Recipe for Real Mac and Cheese

When my son has a play date, and the Mom asks if he can stay for dinner, I say sure. He doesn’t eat much. But when she calls back and says he asked for 3 helpings of her Mac and Cheese — I want the recipe. Here it is, courtesy of my friend Jules — from England.

Real Mac and Cheese

  • 1 1/2 tablespoon cornstarch
  • 1 teaspoon dry mustard
  • 2 1/4 cups whole milk
  • 6 tablespoon butter
  • 2 1/2 packed cups of grated sharp cheddar
  • (I use a mix of sharp and Mexican blend)
  • Approx 8oz pasta (rotini or penne - I think I used rotini - spiral)

Butter 8×8x2 glass dish. Cook noodles until al dente. Meanwhile, combine cornstarch and mustard in a large pan.
Gradually whisk in the milk. Add 2 tablespoons of butter. Whisk on medium
heat until sauce thickens and boils. Remove from heat. Add noodles and grated cheese. Pour into glass dish. Season with salt and pepper, and put remaining slices of butter on top. I also sprinkle a bit
of paprika on top. Bake in a preheated oven - 350f - for about 30 mins.

Like all of you, I am overwhelmed and am currently working on a plan to eliminate all need for sleep so that I will have enough hours in the day. I'll let you know as soon as I have all the kinks worked out. I treasure your comments and emails. I do read them all.
  1. You know there is nothing like a good homemade macaroni and cheese. My MIL makes one that is mouth watering. I don’t know why I haven’t tried to make it before, this recipe look so good I may give it a shot.

  2. Don’t tell but I really LOVE mac and cheese with hot dogs sliced in it. Isn’t that just the white trash food? But I love it.
