Weekends Start With Blueberries

On the weekends, we bring out the big bowl. Not the cereal bowl… but the mixing bowl. The first one up on Saturday morning pulls out the big green bowl, along with the bag of fresh blueberries we picked over the summer.

This is not a quick breakfast… this is a slow, savoring one that we share over lots of maple syrup, stories and kids standing in front of the stove begging, “Can I flip them?” The bubbling blueberries are their favorites…

This morning weekend gathering, which lingers almost to lunchtime, is a great way for us to reconnect from a crazy week of rushed cold cereal mornings.

Here’s the recipe for cornmeal blueberry pancakes.
Ingredients
· 1 cup milk
· 1/2 cup buttermilk (Or use yogurt, or add a teaspoon of vinegar to a 1/2 cup of milk. Let it sit until it curdles — a few minutes.)
· 1 cup whole wheat flour
· 1/2 cup yellow stone-ground cornmeal
· 1 teaspoon baking powder
· 1/2 teaspoon baking soda
· 1/4 teaspoon salt
· 1/4 – 1/2-cup ground flax-seed (always keep this in the freezer.)
· 1 cup blueberries
In a large bowl, combine the flour, cornmeal, baking powder, baking soda, flaxseed and salt. Stir in the milks until combined. Fold in the blueberries and let the batter sit for 5 minutes. Lightly oil a skillet heat over medium heat. When hot, pour the batter into little puddles. When bubbles start to form on top, it’s time to flip.

  5. Fortunately my girl loves a simple breakfast, cereal and milk. We eat together most every morning.

  6. Usually on a weekend my 4 y.o. son and I make a simple breakfast bread with raisins, candied ginger, and pineapple. He measures the flour very carefully and reminds me to put in the baking powder and a pinch of salt. He always begs for a taste of sugar (which I always decline). He also gets to mix- his favorite part. He also loves to grease the bread pan and most of all he loves to lick the spoon afterwards. The only thing is he can never wait for it to bake or cool down- he is ready to eat as soon as it gets in the oven.

  11. We’ve been on a waffle kick… hubby bought me a 6 waffle maker and it allows me to put in a couple of batches and a few for during the week.

  12. During the week it’s pretty much the same, cereal or toast, muffin, something simple. On the weekend however we do like to make something bigger. Pancakes or homemade waffles are a favorite, so are what my kids like to call a farmhouse buffet. We make a big batch of scrambled eggs, fried potatoes, bacon and toast. Everything goes on the table at once and for some reason the kids really enjoy that! :) Thank you for hosting this giveaway, very nice of you :)

  18. I usually make biscuits or pancakes on the weekends. Only because I time to clean up afterwards. And because my stove doesn’t fit in my car and I usually eat breakfast on the way to work. Classy, I know.

  19. We usually sleep a little later on the weekends. I like to make something for breakfast and then eat it in bed – even if it is a bowl or cereal or peanut butter toast. I also love pancakes! If we leave early to run errands, we might stop at Einsten Bros. for a bagel or Chick-Fil-A for a chicken biscuit. Yum!

  20. On the weekends I get up before anyone else, make some coffee and sit down reading the paper. On Sundays I will make biscuits & gravy or eggs,bacon and hashbrowns.

  22. Oh my gosh, I haven’t had blueberry pancakes in so long! I’ll have to save this recipe for next year, when the blueberries are in season again. I love to take extra time to make yummy breakfasts on the weekends, too!

  23. We break out the griddle and start making a mean batch of pancakes and french toast. We add to that jam, syrup, and powdered sugar! We enjoy it taking the time to make a big breakfast and so do the kids!

  24. weekends the grandkids can get up when they want…the younger ones usually want soft oven cinnamon toast and fresh fruit…I am having three grandsons overnight tonight so I am making a Blueberry french toast casserole

    Weekends are definitely different around here.. weekends means more time.. weekends usually mean FRENCH TOAST or pancakes.. with fresh seasonal fruits prepared by the entire family. :)

    Weekends also means everyone eating in the jammies comfortably ;)

    My favorite weekend breakfast is bacon and eggs. On weekdays it’s a protein shake.

  28. We usually make things on weekends that we don’t have time to make during the week like steel cut oatmeal, pancakes, waffles, french toast, poached eggs, etc.

  29. My granddaughter visits on the weekends, and she insists that her Grandpa make his special oatmeal with peaches or bananas in it. I like French Toast and bacon.

  30. My kids are grown but I still get up in the morning read scriptures say prayer and sit down to breakfast. We share the days plans and move out to our day.

  39. Weekdays are quicker breakfasts for us. Usually cereal and fresh fruits. The weekends allow more time and we have a Sunday morning tradition of eating together. Dad cooks us all breakfast… Usually pancakes and they are wonderful. This is truly special since my daughters are almost grown and they never miss a Sunday morning with us… :)

  40. During the week I always make sure the kids get a healthy breakfast (my mom was a teacher so I know how important it is!) I even have some fiber and protein bars handy on the morning someone hits my snooze button too many times (who could that be!) so at least they’re getting the nutrients they need!

  44. The only time we ever have bacon or sausage is on the weekend. Weekend breakfast is definately less healthy!

  45. Weekend breakfasts are more relaxed. I get to linger over coffee and sometimes when all of the stars are alligned just right, the man of the house might even take care of making breakfast.

  53. Last Christmas the gift that I really wanted was a double burner griddle so I can make blueberry pancakes on the weekends. I love that griddle..it’s making memories! I always try to make sure my daughter eats something for breakfast..during the week it usually has to be something fast like cereal but weekends I try to take a bit more time and make something different to give her some variety.

  54. Sunday is our lazy day. We stay in bed till late and then everyone gets up and we make a big breakfast of fried potato and fried eggs. Yum.

  55. On weekend mornings my parents would make us pancakes with bacon or sometimes omelets. Now I make those for myself and my nieces whenever they visit. Weekdays feature more cereal and oatmeal. Also, we enjoyed two hours of extra sleep! :)

  64. When the children were young we always had a big breakfast on Saturday morning. Either pancakes or waffles, bacon or sausage, eggs, milk and juice. On Sunday it was either a repeat of Saturday or on rare occasions we would run to the local Winchell’s for an assortment of doughnuts.

  72. We don’t have a routine on weekends. Everybody gets up when they want, and the late sleeper know that there’s pancake batter in the fridge that they can cook if they want.

  73. I don’t make my kids have breakfast in the morning any longer. They are big kids now and decide on their own whether to have breakfast at home or not. On the weekends we like to have a big breakfast. The rest of the week it’s pretty much a cereal extravaganza.

  74. Our Saturday breakfast isn’t exciting. Just cereal and juice. We spend the next two hours talking to each of our adult daughters, who live out of state. That’ keeps us up to date with THEir lives as well as our Grandkids.
    Sunday we are kind of in a hurry, but still I make the breakfast, and it’s either eggs (no bacon, bad for cholesterol) and toast, with strawberry jam on it. Juice, too, of course. And sometimes we even read the newspaper while we eat. It’s only the two of us, so we aren’t offending anyone.
    This has worked out well for the two of us. I guess others wouldn’t approve, but as long as they aren’t living with us, it’s all right.

  78. Breakfast in the morning is just a non negotiable. Always has been…so my son doesn’t even try ;)

    With my late daughter, her blood sugar issues made it paramount for her to eat asap. Her thyroid meds made it impossible for her to eat when she first woke up. It was a tightrope we walked.

  83. That photo of the blueberries is awesome! I would eat them uncooked though – I may be the only person I know who loves blueberries — until you cook them. I like them mixed with cottage cheese and granola — best breakfast ever! My child prefers them mixed with yogurt. My husband sprinkles them on cereal. Blueberries are the best!
